Crustless Cheesy Bacon Quiche

Prep time 15 min.
Bake time 40 min.
Serves 6

⦁ 1/2 cup tomato, diced.
⦁ 1/4 cup onion, finely diced.
⦁ 1 tablespoon fresh Italian parsley chopped. (Optional)
⦁ 1/2 tablespoon butter
⦁ 8 eggs beaten
⦁ 2/3 cup whole milk
⦁ 1/2 cup plain yoghurt
⦁ 1 cup bacon crumbled
⦁ 3/4 cup diced deli ham
⦁ 1/2 teaspoon salt
⦁ 1/4 teaspoon black pepper
⦁ 1/4 teaspoon season all
⦁ 3/4 cup shredded cheese of your choice.

1 Preheat oven to 350.
2 In a small nonstick skillet, Saute vegetables and parsley in butter until the onions are soft and aromatic.
3 In a medium sized bowl, beat the eggs, then mix in milk and yoghurt. Stir in bacon, ham, seasonings and vegetable mixture, then mix in the shredded cheese.
4 Grease a 9 in. and an 8 in. pie plate (Or see note below.) Pour the quiche mixture into the greased pie plates, filling them 3/4 full, and then bake the quiche for 35-40 minutes, until quiche has puffed up and is starting to brown on the top.
5 Enjoy!

Note* You can also use greased muffin tins and make little individual quiche with the quiche mixture. I like to freeze these for busy mornings when you need a quick breakfast, or are traveling and need breakfast on the go. Note* Mini quiche bake faster so 20-30 minutes at 350 or until the quiche have puffed up and have browned lightly on the tops.

My daughter had fun helping me make this crust less Cheesy Bacon Quiche. I have noticed she eats more if she knows she helped Momma prepare the food. 🙂
