Equipment needed for these mini cheesecake bites:

  • Muffin tins You will need two one dozen muffin tins to bake these mini cheesecake bites in. My personal preference is to use my non-stick muffin tin, it seems to bake the cheesecakes more evenly and has a thicker base.
  • Mixing bowls Mixing bowls will be needed to combine/blend the cheesecake filling and also the sour cream mixture in.
  • Hand Mixer A hand held mixer is my preference for mixing up the cheesecake filling as well as the sour cream mixture.
  • Cupcake liners I also like to use cupcake liners to line the muffin tins with. This makes removing the cheesecakes from the muffin tins much easier and also makes the cheesecake bites easier to serve.

Ingredients needed for these easy mini cheesecake bites: sour cream, pie filling (I used cherry pie filling for a holiday look, but you can also use jam and other pie fillings for the topping), eggs, cream cheese and sugar.

Topping ideas:

My favorite topping to use for these cheesecake bites is pie fillings. Peach, cherry, apple, strawberry and blueberry are all great options to top these cheesecake bites with. Another option is to use jam and jelly. We enjoy strawberry, raspberry, peach, cherry and more on these cheesecake bites as well.

Step 1: In a large bowl, cream sugar and cream cheese together. Add vanilla and eggs, then mix until well combined and smooth.

Step 2: Line muffin tins with cupcake liners, then fill them 2/3 full with cheesecake mixture.Bake for 35-40 minutes until they have puffed up and have started to crack on the tops (you can also do the toothpick test if you are unsure). Remove cheesecake bites from the oven and allow them to cool for 5 minutes.

Step 3: While cheesecake bites are cooling, mix sour cream, vanilla and sugar together until smooth and creamy. Top the cooled cheesecake bites with 1/2 tablespoon of sour cream topping, then return them to the oven and continue baking for another 5-10 minutes.

Step 4: Remove the cheesecake bites again and then allow them to cool completely before topping with a teaspoon of pie filling, fruit preserves or jam. Keep refrigerated and enjoy!

Storage for these creamy mini cheesecake bites:

These cheesecake bites should be kept refrigerated. If freezing, be sure to wrap the cheesecakes well before freezing for up to 3 months.

These Cheesecake bites are a treasured family recipe, passed along from my Mom and old order Amish Grandmother. I like to top these mini cheesecake bites with a variety of jams and pie fillings for a more colorful display. Our favorites were topped with strawberry jam and pineapple jam.
