Lemon Parmesan Asparagus

This fresh and zesty asparagus is my favorite recipe for a quick and easy route to use up asparagus. Made with basic ingredients that are simply tossed together and then baked, this Lemon Parmesan Asparagus is a great recipe to keep on hand for a busy day dinner!

Ingredients
  

  • 1 12 oz. asparagus bunch
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1/3 teaspoon garlic salt
  • salt and pepper to taste
  • 2 tablespoons grated parmesan cheese

Instructions
 

Preheat oven to 425.

  • Trim and discard the ends of the asparagus, then place asparagus into a 9 by 13 inch baking dish. Drizzle asparagus with one tablespoon olive oil, then sprinkle freshly squeezed (bottled lemon juice can be used as well) lemon over top. Add seasonings and grated parmesan and toss to coat.
  • Bake the Asparagus for 12-15 minutes, or until it has softened to your preference. 12 minutes is crisp-tender and 15 minutes is soft baked in my oven, however temperatures and baking times may vary.
  • Allow to cool slightly and then enjoy!

Fresh asparagus is one of the first tastes of summer for us because it is the first thing that pops out of the garden each spring. This easy recipe has been my go-to this year with the busyness of blogging and chasing after two very busy toddlers. Even though this asparagus is easy to whip up, we never have leftovers because everyone (yes, even the toddlers) loves it so much!
