S’mores Cookie Sandwiches

Recently, while in the process of testing browned butter cookie recipes and spending time outside around a campfire with my 3 and 4 year old, we discovered a love for these yummy S’mores cookie sandwiches. Using two cookies instead of having to spread peanut butter on fragile graham crackers for my two toddlers, was an instant win for this Momma who wants to sit as much as possible this summer.

Bake up a batch of your favorite cookies, roast some marshmallows around the fire or in the broiler, and viola-a delicious summer sandwich cookie with less mess and even more "Yum!"

  • Hershey's chocolate bars, Reese's peanut butter cups, peanut butter, Nutella, etc.

Instructions
 

Broiler method:

  • Place 6 cookies (bottoms up) on a baking sheet. Top each cookie with a regular marshmallow (or jumbo sized, depending on the size of your cookies).
  • Place the tray of cookies into the oven and broil until the marshmallows are golden brown on top. Remove the cookies from the oven and carefully turn each marshmallow, then broil again until both sides of the marshmallow are golden.
  • Top the broiled marshmallows with additional fillings or chocolate (optional), then add the second cookie to sandwich the marshmallow between. Enjoy!

Campfire method:

  • Roast marshmallows according to your preference (golden, dark brown, burnt). Carefully remove the marshmallows from the roasting stick and place onto a prepared cookie. Sandwich the marshmallows between two cookies or enjoy them on a single cookie if you prefer. Enjoy!

Notes

For larger cookies you may wish to use a jumbo sized marshmallow for each sandwich. In a pinch, you can also double regular sized marshmallows on top of each cookie.

Equipment needed for these S’more Cookie Sandwiches:

  • Baking sheets If you plan to do the broiler method for these sandwich cookies, you will need a baking sheet to place the cookies and marshmallows onto.
  • Marshmallow roasting sticks For the campfire method, these nifty roasting sticks are useful for roasting the marshmallows. We still use the old fashioned stick off of a tree method, but the roasting sticks are probably more sanitary.
  • Serving platter A three tiered serving platter would make these S’more sandwich cookies a fun option for a party. You can load up the tiered trays with a variety of cookies, chocolate and marshmallows for a campfire party, or load up the trays with premade S’mores sandwich cookies done in the broiler.

Fun Cookie Variations to try with these S’more Sandwich Cookies:

Any cookie is fair game for these S’more sandwiches, but cake-like cookies will not be as sturdy for sandwiching a marshmallow between. My favorite cookie (so far) has been the Browned Butter Peanut Butter Chocolate Chip Cookies, because you get all the S’mores flavors in without having to spread additional fillings onto the cookie! Cookie Prep Ahead Tip:

Cookie dough freezes well and can be prepped ahead to pull out before your campfire or hosting event, then baked fresh. I like to roll the cookie dough into balls, freeze it on a tray for about an hour, then remove the dough balls and place them into a zip-lock bag to freeze until a later date. You can also use day old cookies for these S’more sandwich cookies. Simply allow the cookies to warm up a bit in the broiler or oven to soften them again.

Personalizing your S’mores sandwich cookie:

Because I am watching my sugar intake this summer, I prefer to do an open faced sandwich cookie (as shown above) without any extra chocolate or fillings. For my kids, I do two smaller cookies sandwiching the marshmallow between, because it is easier for them to handle. You can definitely play around with these S’mores cookies by using your favorite cookies as the sandwich base, using additional chocolate or candy as filling with the marshmallow, or by adding plain peanut butter with the marshmallow to help balance the sweetness. Nutella, Biscoff cookie butter or almond butter would also make a great spread to pair with the melted marshmallow sandwich cookies.
