Easy Cherry Popsicles (3 ingredient)

During the hot summer months my kids love homemade popsicles. I avoid food dye as much as possible, so I don’t buy popsicles from the store. We like to add whatever fresh or frozen fruits we have on hand, and it just happens that the past few weeks I have had an abundance of frozen cherries from a local orchard. My favorite parts about these popsicles are that they have a splash of lemon, which makes them taste like cherry lemonade, and they are made with only 3 main ingredients!

Servings 7 popsicles

Ingredients

  • 3 cups fresh or frozen cherries pitted
  • 1 tablespoon lemon juice *see note
  • 1/4 cup sugar or honey

Instructions

  • Place fresh or frozen cherries (pits removed) into a blender, then add sweetener and lemon juice. Blend all together, adding water as needed to get the fruit to blend down (I used up to a cup of water with frozen cherries).
  • Pour the cherry mixture into popsicle molds and place the popsicle sticks in the center. Freeze for 4-8 hours, preferably overnight.
  • To remove the popsicles from the molds, run warm water over the bottom of the molds until the cherry popsicles release. Enjoy!

Notes

Some recipes call for lime juice instead of lemon. I just used bottled lemon juice since it was what I had on hand. I do believe that freshly squeezed lemon or lime juice would taste even better!
You can add natural sweeteners of your choice to these popsicles. If using an alternative sweetener, I would recommend adding it to taste.

Step 1: Place all the ingredients into a blender. Blend all together while adding water as needed to get the cherries to blend down. The consistency should still be somewhat thick, but pourable.

Step 2: Pour the cherry mixture into popsicle molds. Fit the popsicle sticks on top, then freeze for at least 4 hours, but preferably 8, or overnight.

Why only 7 popsicles?

I know, it’s so unhandy that it comes out to 7 instead of 8! I suppose you could add more water and cherries if you want to fill all 8 popsicle molds, but I liked the ratio of cherries to sweetener and lemon juice, so I am sticking to the original recipe for this post.

Step 3: Run warm water over the bottom of the frozen popsicle molds to release the popsicles from the mold. Serve and enjoy!

These popsicles are perfect for my kids to enjoy outside, which gives me a little peace and quiet during the busy summer months. If I had the time, I would enjoy one of these popsicles by the pool side with a good book to read and a bowl of butter ranch pretzels to munch on.

Best Cherry Pitting Hack!!

My mother-in-law taught me to pit cherries by using a hairpin instead of cutting each one in half and then removing the pits. This method is so much quicker and keeps the cherries whole. I haven’t tried a cherry pitter yet but have heard that it can leave some cherry pits behind. I suppose I’ll be digging out my hairpins for the foreseeable future (after sanitizing them of course)!

Alternative Sweeteners I recommend for a health conscious alternative:

I have tried these cherry popsicles with honey and it makes a good choice, but it will add some honey flavor. Agave, Stevia and monk fruit are all good choices as well. If you don’t mind adding extra flavor to the popsicles, I would say try coconut sugar or blend a few dates with the cherry mixture. Of course, you can leave the popsicles free of any sweeteners if you enjoy the tarter sweetness of the cherries.
