My mother-in-law made these cucumber party sandwiches with Ranch and dill for my baby shower before my daughter was born. Since then, this recipe has become a favorite during the summer when we have fresh cucumbers out of the garden. These sandwiches are great for parties and some like to enjoy them with afternoon tea, but my family prefers to eat them with sliced deli ham for lunch. The spread is also delicious as a dip for cucumbers or crackers!

For the Bread:
I prefer to use elongated breads for these cucumber sandwiches, such as baguettes or ciabatta. If I don’t have time to make fresh bread, I like to check the local bakery for artisan breads. I was super excited to find a loaf of “farmers bread” on the sale rack this morning. Not sure what “farmer’s bread” is, but I do know it was a great tasting artisan loaf for these cucumber sandwiches. You can also use regular white bread with the crusts removed to make finger sandwiches. If I have the time, I prefer to use the recipe from Mel’s Kitchen Cafe for Homemade French Bread.

Step 1: Place the first 5 ingredients into a medium sized bowl and mix well with a hand mixer until the mixture is fluffy and lump free.

Step 2: Spread the cream cheese mixture onto sliced bread. You can do open faced or double layered sandwiches for this recipe. Basically, you can make them any shape or size you want.

Step 2-3: add sliced cucumbers and fresh sprigs of dill, then serve and enjoy! Any leftover spread can be kept in the refrigerator for up to a week or so and used for more sandwiches or as a dip for veggies, crackers, pretzels, etc. I may have to hide the leftover cream cheese spread from this morning or my husband will gobble it up when I am not watching. He really enjoys it as a dip and I like to save it for sandwiches, ha-ha.
