My oldest is about to head off to kindergarten in a few weeks. She is going to a private school that does kindergarten toward the spring instead of all winter. Part of me is excited for her, but another part of me is feeling sad at the prospect of not having my little helper around all day. All that to say, I find myself scrambling for lunch box ideas. I tested this recipe out on the family last week and she declared that she gives me 5,000 stars for it :). In that case, I would say this is a great lunch box option!
These flavorful chicken bacon and Ranch pinwheels are easy to prep ahead of time for lunches on the go or even for picnics and potlucks. You may wish to pair them with Amish macaroni salad or Potato salad to help complete the meal.

Ingredients needed for these Chicken Bacon Ranch Rollups: Cream cheese, tortillas, Ranch dressing, shredded cheddar cheese, shredded chicken, Ranch powder, sour cream and bacon.

Step 1: Using a handheld mixer, mix together the cream cheese, sour cream, Ranch dressing and Ranch powder. Mix until smooth and lump free.
Help, the mixture is too stiff!
If the mixture is too stiff, add a little more sour cream. Just enough to get the mixture spreadable. Keep in mind that there will be more add-ins that will stiffen the filling up, unless you are adding hot chicken or bacon, which I do not recommend.

Step 2: Fold in the shredded cheddar cheese, crumbled bacon and shredded chicken.
Can I use bacon bits?
Technically you can add whatever you want to these pinwheels. But, I recommend adding crumbled precooked bacon over bacon bits. We like to use smoked bacon from Sam’s club or John F. Martin when I have it on hand. For best results, allow the bacon to crisp up when cooking to add a bit of crispiness to the pinwheels. Allow the bacon to cool or even chill in the refrigerator before adding it to this chicken bacon Ranch filling.

Step 3: Starting on one long end, gently roll the tortillas into a tight log. *It works best to start with a small amount of tortilla for a tighter roll. Store in an airtight container, then chill in the refrigerator for several hours or overnight. Slice into 1–2-inch pinwheels, then serve and enjoy!
Storage tips:
These chicken bacon ranch rollups can be stored in the refrigerator for several days, but the tortillas will become softer with time. To keep things fresh for a week, store the filling separately, then spread it onto the tortilla before serving (you may need to allow the filling to come to room temperature because the cream cheese will stiffen some in the refrigerator). I do not recommend freezing the rollups because it can result in soggy tortillas.
