My family doesn’t celebrate Easter in the traditional way, but rather it is a time to reflect on the suffering and redemption of Christ’s death on the cross. It is a good time to think about what Jesus endured so that we can be free from our sins, the brutal torture he had to endure so that we can have a peaceful and full life in him. No one else but Jesus would leave a luxurious throne in heaven to come meet us lowly people living on earth in war, sin and pain. All to offer us a beautiful new way of living and walking with him when we accept his free gift of salvation!
While we do not have a big Easter egg hunt planned, this “bunny bait” was a fun project to do with my son while I had the pretty pastel colored M&Ms on hand. This white chocolate Chex snack did not last long at all; my husband and I found ourselves sneaking bits throughout the day because it is so hard to leave alone!

White Chocolate Bunny Bait ingredients: honey nut Chex mix, white chocolate chips, M&Ms, Cheerios, pretzels, cocktail peanuts and shortening.
Is shortening really necessary?
I personally think shortening is a must to get white chocolate nice and smooth for pouring over this snack mix. White chocolate can be quite thick, especially if you are using white chocolate chips instead of almond bark. If using white chocolate almond bark or melting wafers, you may not need to add shortening (or quite as much) to get a nice and spreadable melted chocolate.

Step 1: Place peanuts, Cheerios, Chex, pretzels and M&Ms in a large mixing bowl. Stir gently with a large spoon to combine.

Step 2: Over a double broiler or in the microwave at 10 second intervals, melt white chocolate with a tablespoon of shortening. If the mixture seems too thick, more shortening can be added.
Note: I will admit my makeshift double broiler is slightly odd. I put about 2 inches of water in a saucepan, then fit a mixing bowl containing the white chocolate and shortening on top, ensuring it isn’t touching the water beneath. Allow the water to get to a nice boil, then reduce heat to a simmer and stir frequently until melted. Works splendidly!

Step 2 continued: Once the white chocolate has fully melted, combine it gently with the snack mix in a large mixing bowl.

Step 3: Line a cookie sheet (13 by 18-inches) with parchment or wax paper, then spread the chocolate covered snack mix over top in an even layer. Allow to cool and set for an hour or two.

Final touches: Break the solidified Chex snack mix into smaller portions, then serve immediately or store in an airtight container for nibbling on throughout the day. Enjoy!
Storage notes for this White Chocolate “Bunny Bait”
This white chocolate snack mix keeps well at room temperature. If you have good quality pretzels, they should last for up to a week without getting stale. Be sure to use a container that is airtight to avoid stale snack mix. I haven’t tried it personally, but I do believe you could freeze this snack mix if you want it to last longer than a week.
