I found this recipe in my mom’s recipe album, the one where all the special recipes get handwritten on recipe cards and placed into a scrapbook (tell me we aren’t the only ones who do this?) I loved how easy this ground beef stroganoff was to make, especially since the only chopping required was to slice some mushrooms (and to skip that you can always drain a can of pre-sliced mushrooms to toss in with the beef mixture). My kids loved this easy dinner and there weren’t many leftovers, so I will be making this again!

Ingredients you will need for this ground beef stroganoff: ground beef, sliced or canned mushrooms, butter, flour, beef stroganoff seasoning mix, water or milk, sour cream and egg noodles.
Is it better to use sliced or canned mushrooms and can other vegetables be added?
To make this dinner the easiest, you can simply toss in a can of pre-sliced mushrooms, however freshly sliced mushrooms will taste the better. You can also dice some onions and mince fresh garlic to toss in with the ground beef for an extra touch of flavor. This step is optional and I found the beef stroganoff to be flavorful enough with the seasoning mix for flavor.

Step 1: Cook the egg noodles according to package directions then drain off the excess water reserving some to thin the sauce if needed.

Step 2: While the egg noodles are cooking, brown ground beef in a large non-stick skillet and toss in the mushrooms during the last several minutes of browning to soften.

Step 3: Remove beef and mushrooms from the skillet and set aside, then melt butter in the same skillet. Stir in flour until smooth, then add water or milk and seasoning mix. Bring to a slow boil while whisking rapidly until thickened.
Note on the sauce:
If adding water to the sauce, it will be thinner and not as creamy as if you add milk. You may need to add pasta water or a little extra milk to thin the sauce if you are using full fat milk. As with all butter and flour-based sauces, be sure to heat the sauce slowly while stirring rapidly to avoid curdling the sauce.

Step 4: Add sour cream to the sauce and stir until well combined. Add the ground beef and cooked pasta, tossing until combined with the sauce. Serve and enjoy!
Side dishes to pair with this simple ground beef stroganoff: If you want an elegant side to pair with the ground beef stroganoff, try bacon wrapped asparagus or sausage stuffed mushrooms. For prep ahead slow cooker sides, you could try smoky creamed corn or brown sugar glazed carrots. My family loves bread sides with a pasta meal like this one, so I also recommend Olive Garden copycat breadsticks or copycat Pizza Hut breadsticks.
Storage notes:
This beef stroganoff should be kept refrigerated in an airtight container if you have leftovers. I do not recommend storing it for longer than 5-7 days. This is also a great option for freezing as a freezer meal or for storing the leftovers longer. You can freeze the leftovers tightly wrapped or in an airtight container for up to several months.
Thank you for stopping by and I hope you have a great day! May you feel the peace of Jesus in your life today, in whom we have redemption through his blood, even the forgiveness of sins: (Colossians 1:14.)
