Non-Alcoholic Strawberry Rhubarb Spritzer

Last week I was excited to find rhubarb for sale at a horse and buggy Mennonite yard sale. My cousin Esther recommended trying her favorite strawberry rhubarb drink and it did not disappoint! I am looking forward to my own rhubarb maturing enough to harvest so that I can make this drink again. This recipe is made without alcohol for a family friendly drink you can serve at birthday parties or family gatherings this summer.

Ingredients

  • 2 cups water
  • 8 oz. cubed fresh rhubarb roughly 1 3/4 cups
  • 8 oz. halved and de-stemmed fresh strawberries
  • 1/3 cup granulated sugar can add more or less to taste
  • 16.5 oz. club soda or plain sparkling water (1/2 liter) See note below
  • Juice of 1 lime optional

Instructions

  • Place two cups water in the bottom of a steamer pot (*see note below if you do not have a steamer). Fill the steamer basket with washed and chopped rhubarb and strawberries (de-stemmed). Bring the water to a boil, then reduce heat to a simmer and steam the fruit for 15 minutes to release the juice.
  • Once the fruit loses its color and is very soft, mash with a fork or potato masher to release as much juice as possible, then discard the remaining pulp. Strain the juice in the steamer pot through a sieve to remove any residual pulp if needed.
  • Stir in sugar, adding to taste if desired, then chill the juice for an hour or two until cooled completely.
  • Stir in club soda (or plain sparkling water), and lime juice if desired. Pour into a pitcher and add several cups of ice (optional). Serve over additional ice and enjoy! *Note on adding ice below.

Notes

I have tried this recipe (as shown in photos below) with lemon lime sprite. It would have tasted great if I had reduced or omitted the additional sugar. If using Sprite or sweetened carbonated water, be sure to add less sugar or to add it to taste.
If you do not have a steamer pot, you can also boil the fruit directly in the water, then strain through a sieve or cheesecloth to remove the pulp.
This drink is fairly concentrated so you can use a fair amount of ice without losing too much flavor. If desired, you can also add more club soda to dilute the flavor.

Other refreshing drinks you don’t want to miss out on this summer:

Ingredients you will need: Water, sparkling water or club soda (I used Sprite, but found it too sweet with added sugar), lime (optional), rhubarb, strawberries, and sugar.

Note on adding Sprite or sweetened carbonated water:

You can use Sprite or sweetened carbonated water in this strawberry rhubarb drink, but as mentioned above I would recommend reducing the amount of additional sugar added or even omitting the additional sugar completely. During my test on this recipe, I used Sprite and 1/2 cup sugar. It made the drink too sweet for my taste, but of course the kids loved it (can you tell they like their sweets a little too much? Haha.)

Step 1-2: Place two cups water in the bottom of a steamer pot (*see note below if you do not have a steamer). Fill the steamer basket with washed and chopped rhubarb and strawberries (de-stemmed). Bring the water to a boil, then reduce heat to a simmer and steam the fruit for 15 minutes to release the juice. Mash the softened fruit with a fork or potato masher to release any remaining juice. Discard the pulp and strain the juice from the steamer pot to remove any additional pulp (if needed).

Can the fruit be steamed longer?

Some recommend steaming fruit for up to an hour to fully release the juice, but I was concerned about the liquid evaporating too much during such a long steaming process. The 15-minute mark was about perfect to get a nice, rich juice from the steamed berries and rhubarb.

Step 3: Stir in sugar, adding to taste if desired, then chill the juice for an hour or two until cool.

Final step: Pour the juice concentrate into a serving pitcher, then stir in club soda (or unsweetened sparkling water) and lime juice if desired. Add several cups of ice (or as desired), then serve over additional ice in glass tumblers. Enjoy!

Storage notes:

If you wish to prep this juice ahead of time, do not add the sparkling water. You can keep the concentrate in the refrigerator for several days or even freeze it for several months. Before serving, thaw and stir in the club soda and as much ice as desired.
