Roasted broccoli with olive oil, grated parmesan cheese, garlic powder and other spices is one of our favorite vegetable side dishes for dinner. This broccoli has a nice crispy texture thanks to being tossed in the oil and then roasted for 20-30 minutes. We like to serve this broccoli with pretty much any casserole or main dish, but for some dinner ideas to pair with this side, check out the list of recipes below the recipe card.

Easy Oven Roasted Broccoli
Ingredients
- 2 pounds broccoli florets or 8 heaping cups
- 1/2 cup olive oil
- 1/2 cup grated parmesan cheese sand textured
- 1/4 teaspoon seasoned salt (Lawry's salt/season all)
- 1 teaspoon garlic powder
- salt and pepper to taste
Instructions
Preheat oven to 425 degrees:
- Prepare broccoli heads (unless using prepackaged broccoli florets) by washing, trimming off the stems and separating into bite sized pieces. Place into a large mixing bowl and toss with olive oil, parmesan cheese and spices. Lightly sprinkle with salt and pepper to taste. Note* Can always add more salt and pepper once the broccoli has been cooked but be careful not to over season the broccoli.
- Spread the broccoli onto a 13 by 18-inch baking sheet, spreading to give the broccoli space between for more even roasting.
- Roast the prepared broccoli for 20-30 minutes until browned to preference and crispy. Give the broccoli a toss halfway through the roasting process for a more even roast. Be sure to watch carefully to avoid burning and adjust heat if the broccoli is browning too quickly. Allow to cool slightly, then enjoy! Additional notes and storage tips below.

*My personal favorite is the Easy Barbequed Chicken with Creamy Cheddar Mac and Cheese and a side of this roasted broccoli. A 3-part meal, but totally worth it and the chicken can be prepped ahead and done in the slow cooker.

Ingredients needed for this simple roasted broccoli: salt and pepper, grated parmesan cheese, garlic powder, seasoned salt, olive oil and broccoli.
Can I use other spices?
Yes, you can swap out the spices given for your favorite blend of spices, but I do not recommend changing the amounts of the other ingredients to avoid changing the recipe completely. Seasonings can be added to preference, but keep in mind it will also alter the taste from the original recipe.

Step 1: Preheat oven to 425. Prepare broccoli heads (unless using prepackaged broccoli florets) by washing, trimming off the stems and separating into bite sized pieces. Place into a large mixing bowl and toss with olive oil, parmesan cheese and spices. Lightly sprinkle with salt and pepper to taste. *Note: Add salt and pepper sparingly to avoid oversalting. Can always add more salt later once the broccoli is roasted.

Step 2: Spread the broccoli onto a 13 by 18-inch baking sheet, spreading to give the broccoli space between for more even roasting. If preferred, you can use two roasting pans.

Step 3: Roast the prepared broccoli for 20-30 minutes until browned to preference and crispy. Give the broccoli a toss halfway through the roasting process for a more even roast. Be sure to watch carefully to avoid burning and adjust heat if the broccoli is browning too quickly. Tip: You can also adjust the oven racks to move the broccoli farther from the heat. If the broccoli is roasting too slowly, increase the heat or broil it for a few minutes.

Allow to cool slightly, then serve and enjoy!
Storage tips:
Leftover broccoli can be wrapped or stored in an airtight container and refrigerated for several days or frozen for up to several months. Once refrigerated/frozen, the broccoli will lose some of its crispiness.
