Oreo cheesecake bars are easier than they look and definitely easier than making a regular cheesecake! All you need to do is crush some Oreos to mix with butter for the Oreo base, then whip up the cheesecake filling and toss in some more crushed Oreos. For my Oreo loving family, this dessert simply did not stick around long enough because we scarfed it up so quickly.

Ingredients you will need for the Oreo Cheesecake Bars: Cream cheese, butter, sugar, sour cream, Oreo Cookies, eggs, vanilla extract and salt (not pictured).
Can off-brand Oreos be used?
Yes, chocolate sandwich cookies that are similar to, but not labeled “Oreo” are fine in this recipe. As you can see in the photo I used a brand that came from Aldi (if I am remembering correctly) and the cheesecake bars turned out just fine. You will need a large family or party sized package of Oreos for this recipe, or two regular sized packages will be enough as well.

Step 1: Combine finely crushed Oreo cookies and melted butter in a small mixing bowl. Press into the bottom of a greased 9 by 13-inch baking dish. Bake in the preheated oven for 7-8 minutes until the crust is set. Allow to cool completely.

Step 2: Using a handheld mixer, combine softened cream cheese and sugar until smooth. Add beaten eggs, salt, vanilla extract, and sour cream. Mix well until smooth, then fold in broken Oreo pieces. Evenly spread the cheesecake filling over the cooled Oreo crust.

Final step: Reduce oven heat to 325, then bake the cheesecake for 30-40 minutes until golden on top and set in the center. The cheesecake should begin to crack on top when done. Remove from heat and allow to cool. If desired, additional crushed Oreos can be sprinkled over top. Chill for 4-8 hours before cutting, then serve and enjoy!
Baking tips for the cheesecake bars:
To keep the cheesecake bars from having a tough texture, be sure not to overbake them. Cheesecake bars are done as soon as the center no longer has a lot of wobble when lightly shaken. Some say it can have a slight wiggle because it will finish cooking as it cools. If you wish to check with a food grade thermometer, the center should come to 150 degrees (Fahrenheit).
Storage tips:
Keep these cheesecake bars refrigerated. They keep for up to a week in the refrigerator. Cheesecake can also be frozen, but I have not tried it personally. If freezing, be sure to wrap the bars tightly or keep them in an airtight container to avoid freezer burn.
