Amish Fried zucchini sandwiches

If you have never tried a fried zucchini sandwich, then you are missing out! This Amish family favorite is an easy summertime favorite and is a great way to use up zucchini!

Ingredients
  

  • 1 med-large peeled and sliced zucchini should yield 25-30 slices
  • 2 eggs beaten
  • 1 cup Italian style bread crumbs (or plain breadcrumbs)
  • 1/4 teaspoon garlic salt
  • 1/3 teaspoon season all
  • few dashes paprika

Optional Sandwich fixings:

  • fresh homemade bread. sliced
  • tomato slices
  • onion slices
  • sliced cheese
  • fresh lettuce
  • Sandwich dressings/sauces of your choice
  • Pickles
  • Salt and pepper

Instructions
 

  • Combine the bread crumbs and seasonings in a small bowl and beat the eggs in a separate bowl/dish. Dredge the zucchini in the egg wash and then in the bread crumbs until evenly coated, shaking off any excess crumbs.
  • Add an even layer of oil to a large non-stick pan for deep frying and then heat over medium heat for 30-60 seconds or until the oil reaches 350 degrees. Working in batches, fry the zucchini for a minute or two per side until both sides have reached a deep golden brown and the zucchini has softened.
  • Line a plate or platter with paper towels, then transfer the zucchini from the frying pan to the plate. Serve the Zucchini fritters with the toppings and bread of your choice and enjoy!
