Ingredients
  

  • 1 large chicken breast
  • 2 cups broccoli florets
  • 3/4 cup diced onion
  • 1 cup finely cubed carrots
  • 3 medium potatoes, peeled and finely cubed
  • salt and pepper add to taste or see note
  • Season all (to taste) optional
  • 5 cups chicken broth
  • 1 cup frozen peas optional
  • 12 oz. Velveeta or mild cheddar cheese see below for substitutions
  • 1/2 cup shredded or grated parmesan cheese optional
  • 1 cup heavy cream
  • 2-3 tablespoons cornstarch

Toppings (optional):

  • cooked and crumbled bacon
  • additional shredded cheddar cheese

Instructions
 

  • Place the chicken breast, broccoli, carrots, potatoes and diced onion into a 6-7 quart slow cooker. Season with salt, pepper and season all (optional), then pour chicken broth over the veggies and chicken, ensuring the potatoes are covered in broth.
  • Cover and cook on low for 5-6 hours or cook on high for 3-4 hours until the veggies have softened and the chicken is cooked through. During the last hour of slow cooking, remove the chicken breast and shred or cube. Return the chicken to the crockpot, then stir in the peas, parmesan (optional), heavy cream and velveeta or shredded cheddar cheese. Continue cooking until the peas are soft and the velveeta has melted.
  • Optional step: To thicken the soup, remove one cup of hot liquid from the crockpot, then bring to a boil in a small saucepan over stovetop. Combine 2-3 tablespoons of cornstarch with enough water to make a slurry, then whisk the slurry into the boiling liquid. Whisk until the mixture has thickened, then pour the sauce back into the crockpot and stir into the soup. Serve and enjoy!

Notes

I like to season the chicken and veggies with 1/2 teaspoon salt, 1/4 teaspoon ground black pepper and then season everything lightly with season all. Additional salt and pepper (or season all) can be added to taste later, once the soup is cooked through.

Velveeta is a processed cheddar cheese that is similar to American cheese. Because of its nice melting consistency, it works well for soups like this broccoli chicken soup, cheeseburger soup and more. However, velveeta cheese is not the healthiest cheese on the planet, and some (including my husband) are not fans of the taste or texture. If you prefer to use a different option for creating a creamy and cheesy soup base in this chicken broccoli soup, I would suggest shredded mild cheddar cheese (mild cheddar melts better than sharp cheddar) or even yellow American cheese. Pepper jack cheese, Monterey jack or gouda cheese are other options I’ve found on the net, but haven’t tested personally.
