Servings 20 breadsticks

Equipment

  • baking sheets (linked below)
  • Stand mixer (linked below)
  • measuring cups (linked below)
  • Dough cutter (linked below)

Ingredients

  • 1 cup warm water
  • 1 tablespoon active dry yeast heaping *see note
  • 2 tablespoons granulated sugar
  • 1 3/4 teaspoons salt
  • 1/4 cup vegetable or olive oil
  • 1 cup all purpose flour
  • 1 1/2-2 cups bread flour

Garlic butter topping:

  • 1/4 cup butter melted
  • 1/8-1/4 teaspoon salt can be added to taste
  • 1/2 teaspoon garlic powder

Instructions

Preheat oven to 425 (during last rising session):

  • In the bowl of your stand mixer, whisk together the active dry yeast, warm water, sugar and salt. Allow to rest for ten minutes until bubbly, then whisk in the vegetable oil and one cup all purpose flour.
  • Transfer the mixing bowl to the stand mixer (fitted with a dough hook). Add the bread flour, 1/2 cup at a time, and mix between each addition for several minutes on med-high speed until the flour is well incorporated and no longer sticking to the bowl. Remove the dough and knead by hand for an additional 5-10 minutes until the dough feels very soft and supple. Return the dough to the mixing bowl and cover with a tea towel. *see note below.
  • Allow the breadstick dough to rest for 1 hour, then remove the dough and portion into 20-24 pieces, depending on how large you like your breadsticks. Shape the breadsticks by rolling the balls of dough outward until thin sticks of dough are formed. Place the breadsticks onto two lightly greased baking sheets and cover. Allow to rest for an additional 50-60 minutes until doubled in size.
  • Combine the melted butter with salt and garlic butter, then bake the breadsticks in the preheated oven for 5 minutes. Remove the breadsticks from the oven and brush half of the garlic butter topping over each breadstick. Return the breadsticks to the oven (alternating the sheets from top to bottom) and continue baking for 5-8 minutes until the breadsticks are golden on top and lightly browned on the bottoms. Brush the remaining garlic butter onto the breadsticks, then cool slightly and enjoy!

Notes

For the best results in these breadsticks, be sure to use fresh active dry yeast. Yeast is active and fresh when plenty of bubbles form during the ten minutes of resting in the mixture of warm water, salt and sugar.
Allow the breadstick dough to rise in a warm place (no less than 70 degrees (F)) If your kitchen is cooler than 70 degrees, you can place the dough into the oven with the light turned on. Be sure to remove the breadstick dough from the oven before preheating.

  • Stand mixer A stand mixer is useful for combining the dough until smooth and elastic.
  • Measuring cups Measuring cups are needed to ensure you have an accurate measurement of the ingredients needed to make these copycat Olive Garden Breadsticks.

Ingredients needed for these Copycat Olive Garden Breadsticks: Butter, oil, all purpose flour, garlic powder, salt, bread flour, sugar, active dry yeast and warm water.

Why use both all purpose flour and bread flour?

Using a combination of bread flour and all purpose flour in these breadsticks gives them the perfect balance of soft and chewy. Bread flour has a higher gluten content than all purpose flour, which produces a softer texture in breads etc. If you wish to change up the texture of the breadsticks, you could use all bread flour for a softer breadsticks, or only all purpose flour for chewier breadsticks.

What temperature should the water be for active dry yeast?

The water temperature to activate active dry yeast should be between 110-115 degrees. If you aren’t sure, use a thermometer to ensure the water isn’t too hot or too cold, which can kill the yeast.

Step 1-2: In the bowl of your stand mixer, whisk together the active dry yeast, warm water, sugar and salt. Allow to rest for ten minutes until bubbly, then whisk in the vegetable oil and all purpose flour. Transfer the mixing bowl to the stand mixer (fitted with a dough hook). Add the bread flour, 1/2 cup at a time, and mix between each addition for several minutes on med-high speed until the flour is well incorporated and no longer sticking to the bowl. Remove the dough and knead by hand for an additional 5-10 minutes until the dough feels soft and supple. Return the dough to the mixing bowl and cover with a tea towel.

Step 3: Allow the breadstick dough to rest for 1 hour, then remove the dough and portion into 20-24 pieces, depending on how large you like your breadsticks. Shape the breadsticks by rolling the balls of dough outward until thin sticks of dough are formed. Place the breadsticks onto two lightly greased baking sheets and cover. Allow to rest for an additional 50-60 minutes until doubled in size.

Step 4: Combine the melted butter with salt and garlic butter, then bake the breadsticks in the preheated oven for 5 minutes. Brush the remaining garlic butter over the breadsticks, then cool slightly and enjoy!

Storage for leftover breadsticks:

These breadsticks are best when fresh, but can be kept in a zip-lock bag or airtight container for several days at room temperature. These breadsticks can also be frozen for several months. You can reheat the breadsticks by placing them in the oven on the warm setting for 5-10 minutes.
