After making multiple batches of rice krispie treats and tweaking recipes, I finally found a good ratio for deliciously gooey rice krispie treats that stay soft and are loaded with marshmallows! My little family of four will eat half a pan full of these in a day, so if you have a larger family I would definitely recommend doubling the recipe to make a 9 by 13 inch pan full of these easy treats. Rice Krispie Treats are great to take to coworkers and friends or for a back to school treat for your kids.
Note* You can make these Rice Krispie Treats gluten free with the use of crispy rice cereal that specifies gluten free on the package (I usually find mine at Aldi).

The Best Gooey Rice Krispie Treats
Equipment
- 9 by 9 inch baking dish (linked below)
- Baking spoon (linked below)
- Parchment paper (linked below)
- Saucepan (linked below)
Ingredients
- 5 1/2 cups mini marshmallows packed and leveled
- 5 tablespoons butter
- 1/8 teaspoon salt *see note
- 1/2 teaspoon vanilla extract
- 4 cups Rice Krispies/crispy rice cereal
Instructions
- Melt mini marshmallows and butter in a 3 quart saucepan over medium-low heat, stirring constantly to keep the bottom from burning. Once the marshmallows have melted, stir in vanilla extract and salt.
- Remove the marshmallow mixture from the heat, then quickly fold in the rice cereal before the marshmallow mixture cools. Gently mix the rice krispie cereal and marshmallow mixture until well combined, then press into the bottom of a 9 by 9 inch baking dish lined with parchment or wax paper that has been lightly greased with cooking spray or butter to prevent the rice krispies from sticking once cooled.
- Allow the rice krispie treats to cool completely, then cut into squares and serve immediately or store in an airtight container for several days (see storage notes below). Enjoy!
Notes
Equipment needed for these easy rice krispie treats:
- 9 by 9 inch baking dish You will need a 9 inch baking dish for the amount of rice krispie treats this recipe produces. You can also use an 8 by 8 inch baking dish, but the rice krispie treats will be a little thicker.
- Baking spoon I like to use a baking spoon to stir the mini marshmallows and butter while melting. You can also use a wooden spoon or whisk.
- Parchment Paper Parchment paper (or wax paper) is needed to line the baking dish for easier removal of the rice krispie treats. Be sure to lightly grease the parchment paper to keep the rice krispie treats from sticking onto the parchment.
- Saucepan I prefer to use a 3 quart saucepan for plenty of room to mix all the ingredients needed for these rice krispie treats.

Can these rice krispie treats be frozen?
Yes, rice krispie treats freeze well and can be frozen for up to 3 months. In fact, if you plan to store the rice krispie treats for more than several days, I would recommend freezing them to keep them fresher and to keep them from drying out. You can freeze the rice krispie treats in an airtight container or in zip-lock bags.
