The Best Fried Chicken

Fried chicken is something I have always loved to make for dinner despite the mess that it makes, but I have learned that it helps to keep a lid on the chicken to avoid some of the mess, as well as keeping the heat at a medium temperature instead of on high. This recipe is my favorite because it uses strips of chicken breasts that are breaded in flour, breadcrumbs, parmesan and seasonings, then fried in olive oil until nicely browned and perfectly crispy. Ingredients

  • 2.5 pounds chicken breast cut into strips
  • 3 large eggs, beaten
  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs panko or Italian style
  • 1/2 cup grated parmesan cheese sand textured
  • 1 teaspoon garlic powder
  • 1 teaspoon salt can adjust as desired
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon Seasoned Salt (Lawry's seasoning)
  • 1/2 teaspoon Old Bay seasoning *see note
  • Olive oil for frying *see note

Instructions

  • Cut chicken breast into thin strips. Beat eggs in a medium sized bowl and set aside, then mix flour, parmesan, breadcrumbs and seasonings in a separate bowl.
  • Working in batches, coat chicken in the flour mixture, then in egg, then flour mixture again (it works best to use one hand for dry and one for wet to reduce mess).
  • Add enough olive oil to a large frying pan for an inch or two on the bottom of the pan. Over medium heat, heat the oil to around 350 degrees (Fahrenheit) or until the chicken sizzles when added to the hot oil.
  • Working in batches again, fry the chicken for 5-10 minutes per side, until nicely browned and the internal temperature reaches 165-180 degrees (I highly recommend using a meat thermometer to check).
  • Remove the chicken from the pan and transfer to a covered baking dish until all the batches of chicken are completed. Serve with dipping sauces if desired and enjoy!

Notes

Old Bay seasoning is an optional seasoning but highly recommended because it adds a great flavor to the fried chicken.
You can use other oils for frying the chicken such as canola oil, peanut oil or refined avocado oil, but my personal favorite is olive oil for the nice golden color it gives the chicken.
Fry the chicken over an even medium temperature to cook the chicken through without burning the outside breading.

Ingredients needed for this fried chicken: grated parmesan, all-purpose flour, garlic powder, ground black pepper, salt, Season all and Old Bay seasoning, chicken breast, eggs, breadcrumbs.

Is it better to use panko or fine textured breadcrumbs?

Regular plain breadcrumbs, or my personal favorite, Italian style breadcrumbs work just fine in this fried chicken recipe, but panko breadcrumbs are preferable because they add a nice crunchy texture that is ideal for fried chicken.

Step 1: Cut chicken breast into thin strips. Beat eggs in a medium sized bowl and set aside, then mix flour, parmesan, breadcrumbs and seasonings in a separate bowl.

Can I use other seasonings in this recipe?

Yes, you can use your favorite seasonings in this recipe, but keep in mind that it will change the flavor. I do recommend adding plenty of salt because the chicken and breading soaks up a good bit. A teaspoon of salt plus 1/2 teaspoon of seasoned salt (season all) was perfect for my family.

Step 2: Working in batches, coat chicken in the flour mixture, then in egg, then flour mixture again (it works best to use one hand for dry and one for wet to reduce mess).

Why coat the chicken in the flour mixture twice?

Coating the chicken in flour twice gives the breading a thicker crunchy texture that is great on fried chicken. If you prefer a thinner breading on the fried chicken, you can dip it in egg wash, then the flour mixture, skipping the second coating. You will need less of the flour mixture if you choose to coat the chicken only once.

Step 3-4: Add enough olive oil to a large frying pan for an inch or two on the bottom of the pan. Over medium heat, heat the oil to around 350 degrees (Fahrenheit) or until the chicken sizzles when added to the hot oil. Fry the chicken over medium heat for 5-10 minutes per side or until the internal temperature of the meat reaches 165-180 degrees. Use a meat thermometer for the most accurate temperature reading.

Final steps: Remove the chicken from the pan and transfer to a baking dish with a lid until all the batches of chicken are completed. Serve with dipping sauces if desired and enjoy!

Our favorite dipping sauces with fried chicken are Chick-fil-a sauce, Ketchup and Carolina gold sauce.

Storage notes:

Fried chicken is best when fresh, but you can store the leftovers in the refrigerator for several days to reheat in the oven or microwave. You can freeze the leftover fried chicken, but it will lose its crunchy texture.
