This easy recipe for fried zucchini sandwiches is just like the delicious sandwiches we would eat during busy summers while growing up in the old order Amish community. My Mother and Amish Grandmothers liked to pair fried zucchini sandwiches with boiled corn on the cob and fresh homemade bread for the sandwiches. This zucchini sandwich is an easy way to use up loads of zucchini and fresh produce from the garden, and was a very popular summer sandwich among the busy Amish Mommas and Grandmas of our community. Cook time: 3-5 minutes.
Serves: 5-6
For the fried zucchini:
- 1 medium-large zucchini (25-30 slices.)
- 2 eggs, beaten.
- 1 cup Italian style Bread crumbs
- 1/4 teaspoon garlic salt
- 1/3 teaspoon season all (or to taste)
- few dashes paprika
For the Sandwich (optional):
- Sandwich bread or fresh homemade bread.
- Tomato slices
- Onion slices
- Cheese of your choice.
- Fresh Lettuce
- Mayo, ketchup, Ranch or dressing/sauces of your choice.
- Pickles
- Salt and Pepper to taste.

- Peel and slice the zucchini and then combine the bread crumbs and seasonings in a small bowl and beat the eggs in a separate bowl/dish. Dredge the zucchini in the egg wash and then in the bread crumbs until evenly coated, shaking off any excess crumbs.
- Add an even layer of oil to a large non-stick pan for deep frying and then heat over medium heat for 30-60 seconds or until the oil reaches 350 degrees. working in batches, fry the zucchini for a minute or two per side until both sides have reached a deep golden brown and the zucchini has softened.
- Line a plate or platter with paper towels, then transfer the zucchini from the frying pan to the plate. Serve the Zucchini fritters with the toppings and bread of your choice and enjoy! Notes and Photos below.

Ingredients for the fried zucchini, minus the oil used for frying.
Substitution:
If you prefer you can use plain bread crumbs and add a few dashes of Italian seasoning, or you can add some finely diced fresh herbs. Feel free to leave herbs/Italian seasonings out entirely if you wish.


Note*
My personal preference for frying the zucchinis is to use olive oil. Frying the zucchini in olive oil gives them a better flavor and also helps to brown them more evenly. But, feel free to use the oil of your choice!
