S’mores Cracker Cookies
Equipment
- Baking sheet (linked below)
- double broiler (linked below)
- Parchment paper (linked below)
Ingredients
- 24 Ritz Crackers *see note
- 48 mini marshmallows or marshmallow creme
- 1 1/2 cups chocolate melting wafers
- peanut butter optional
- Christmas sprinkles, crushed candy canes or white chocolate for coating.
Instructions
- Place 12 Ritz crackers (bottoms up) on a parchment lined baking sheet. Spread peanut butter onto the bottom half of the crackers (optional), then place 4 mini marshmallows on top, or layer on marshmallow creme. If using mini marshmallows, toast in the broiler until lightly browned, then top with the remaining crackers to create a sandwich.
- Melt the chocolate melting wafers in the microwave at 30 second intervals, stirring between each interval. Or melt the wafers in a double broiler over medium-low heat (with water simmering in the bottom section of the broiler).
- Stir the chocolate until fully melted. Coat the cracker sandwiches in melted chocolate using a fork or spatula to coat the crackers on all sides, top and bottom. Place the coated cracker sandwiches onto the baking sheet lined with parchment paper.
- Add sprinkles or crushed candy canes onto the coated crackers, then chill the Smore's cracker cookies in the refrigerator until the chocolate is hardened. If you wish to decorate the tops of the cookies with white chocolate, chill the cookies until the chocolate coating is hardened before decorating with white chocolate. Notes
Equipment needed for these S’mores cracker cookies:
- Baking sheets Baking sheets are needed for transferring the crackers to the broiler (if using mini marshmallows) and to the refrigerator to allow the chocolate to chill.
- Double broiler A double broiler is nice to have for melting chocolate, and also allows you to be able to control the temperatures better than a microwave does.
- Parchment paper Parchment paper is needed to place the chocolate coated crackers onto. Using parchment paper makes removing the crackers once chilled much easier.

Fun decorating tips to make these S’mores Cracker Cookies extra festive:
For the Christmas wreath look shown above: place melted white chocolate or yogurt bark into a zip-lock bag. Snip a small bit of the end from one corner, then pipe connecting dots of white chocolate around the cracker (after the milk chocolate has chilled and hardened). Sprinkle Christmas sprinkles onto the warm white chocolate, shaking off the excess sprinkles. Place the Christmas tree (could also use gold or silver dots, star sprinkles etc.) sprinkles around the circle of sprinkles and white chocolate to create the wreath look.
Candy canes: You can also sprinkle crushed candy canes on top of the chocolate while still warm, or press crushed candy canes onto the sides of the coated crackers.
White chocolate: White chocolate can be drizzled on top of the chocolate covered crackers once the chocolate has hardened, or you can try a swirled look on top of the crackers by blending the white chocolate and milk chocolate together with a skewer or toothpick while the chocolate is still warm.
Christmas shapes: Use mini cookie cutters or paper to dust on sanding sugar in the shapes of stars, Christmas trees or even snow men! Have fun and show us your creations on Instagram.
